Kale - Mighty Green is right! Crunchy mild spinach flavor. Kale is a known super food due to the amounts of vitamins A, K, B6 and C, calcium, potassium, copper and manganese it contains. One cup of raw kale has just 33 calories and only 7 grams of carbohydrate. So, it’s a very weight-friendly/diabetes-friendly microgreen.

Pea shoots - This Mighty green is known for its sweet but nutty flavor. It can be used in salad mixes without adding the extra calories from salad dressings. It adds a nice crunch to your plate! Pea shoots are a good source of vitamin C, Thiamin, Niacin, vitamin B6, magnesium, phosphorus, copper and manganese, and an excellent source of folate(The brain vitamin). They’re high in antioxidants and carotene.

Radish, China rose - These Mighty greens are mildly sweet, with a savory spicy flavor. Radish greens have vivid pink stems making them beautiful, flavorful and nutritious. They also add a nice crunch to your plate. High in Vitamin A, B6, C & E. this magic green helps aid in digestion, facial acne, support kidney function and last but not least they help breakdown fats which in return promotes weight loss!

Broccoli, Di Cicco - It has a Mild fresh broccoli flavor. Packed with nutrients, minerals & antioxidants. These Mighty greens contain Vitamins A, B, C, E, and K, macro-elements calcium, magnesium and phosphorous, and micro-elements iron, copper, and zinc. Who needs a multivitamin? Just add some greens to your diet!

Sunflower, Black Oil - These Mighty greens have so many health benefits it's mind blowing. Not only are they a perfect source of complete protein, but they are also PACKED with Vitamins A, B complex, D, and E; they also have minerals like calcium, iron and potassium. Enough with the vitamin talk let's talk about the cool stuff. These microgreens are known to help build our muscular, skeletal and neurological systems. They activate EVERY cell in our immune system which helps keep our gut bacteria healthy and makes it easier to fight off disease. They boost fertility and are an excellent source of folate for women to eat while pregnant. Folic acid is an essential nutrient for brain development in babies in the womb. Last but not least it helps lower blood pressure and prevent heart disease. Sounds like a Magic green to me. Do you agree?!

Amaranth - Amaranth is a nutritious, gluten-free grain that provides plenty of fiber, protein and micronutrients. It has also been associated with a number of health benefits, including reduced inflammation, lower cholesterol levels and increased weight loss.

Arugula Arugula is full of antioxidants -- compounds that can protect against or reverse damage to your cells.

Arugula also has glucosinolates. These natural substances, which give arugula its bitter taste and strong scent, may protect you against certain cancers, including breastprostatelung, and colon cancers. Arugula may also fight inflammation. It has ample vitamin K, which is good for your bones and may help prevent osteoporosis.

Salad Mix - Salad greens contain Vitamin A, Vitamin C, beta-carotene, calcium, folate, fiber, and phytonutrients. Leafy vegetables are a good choice for a healthful diet because they do not contain cholesterol and are naturally low in calories and sodium.

Beets - Beets contain high levels of nitrates. According to data from Harvard Medical School, nitrates are converted by your digestive system into the compound nitric oxide. In turn, nitric oxide acts as a relaxant for your blood vessels, widening them so your blood pressure goes down naturally. Additional research found that the dietary nitrate in beets may cut the overstimulation of the sympathetic nervous system, which can happen if you have heart disease. It's possible that beetroot juice could actually become a cardiovascular treatment in the future.

Golden Flax - Though tiny, they are rich in the omega-3 fatty acid ALA, lignans and fiber, all of which have been shown to have many potential health benefits. They can be used to improve digestive health, lower blood pressure and bad cholesterol, reduce the risk of cancer and may benefit people with diabetes. 

​

These flax greens are an amazing source of omega-3 fatty acids, great for boosting heart and eye health. Their soft, smooth texture pairs with a slightly bitter and nutty taste that makes a fine complement to a smoothie or juice shot.

Cabbage (red acre) - Cabbage red acre contains antioxidants classified as anthocyanins. These antioxidants may be effective at fighting Alzheimer's disease, weight gain, cancer, diabetes, asthma, and Parkinson's.

Our red acre cabbage microgreens are easy to grow and a sight to behold with their beautiful petite red stalks. More importantly, they provide plenty of Vitamin C, beta-carotene, and iron. These greens have a fresh, sweet flavor with a slightly spicy aftertaste, especially lovely for salads and garnishes.

Alfalfa - People typically consume alfalfa as an herbal supplement or in the form of alfalfa sprouts. Because the leaves or seeds are sold as herbal supplements and not as foods, no standard nutrition information is available. However, they are typically a fair source of vitamin K and also contain many other nutrients, including vitamin C, copper, manganese, and folate.

Alfalfa sprouts contain the same nutrients and are also very low in calories.

Alfalfa has long been a favorite microgreen, beloved for its satisfying crunch and smooth flavor. In addition, it has plenty of biotin, vitamin B, potassium, and many other nutrients it can lend to your salad or sandwich.
